性状：类白色或浅黄色无定形粉末。是从各种动物胰脏制取的蛋白酶、脂酶和淀粉酶混合物。有吸湿性。水溶液煮沸或遇酸即失去酶活力。其最大活力在中性或微碱性介质中。矿酸或过量氢氧化物或碳酸盐使之失活

储存条件： 2～8℃

溶解性：不溶于乙醇和乙醚。

用途：在中性或弱碱性环境中（酸碱度6.8～8.5）胰蛋白酶能使蛋白质转化为蛋白胨，胰淀粉酶能使淀粉转化为糖，胰脂肪酶则能使脂肪分解为甘油及脂肪酸

敏感性：对光敏感
