      蛋白酶K是一个稳定，高活性丝氨酸蛋白酶。从晶体和分子结构研究的证据表明这种酶属于枯草杆菌家族，带有活性催化位点催化三键（Asp39，His69 - Ser224）。它是在宽的的环境范围内保持稳定：pH值，缓冲盐，去垢剂（SDS），和温度。在0.1-0.5% SDS存在下，在分离DNA中，蛋白酶K保持活性，消化各种蛋白质和核酸酶。
