一般所说的海藻糖即D-海藻糖，它是在自然界动植物和微生物中广泛存在的一种双糖，由2个葡萄糖通过α，α－1→1键所形成，D-海藻糖二水化合物是指含有两个结晶水的D-海藻糖。海藻糖是由特殊双糖分子构成的非还原性糖，特性非常稳定，能够在高温、高寒、干燥失水等恶劣的条件下在细胞表面形成特殊的保护膜，有效的保护生物分子结构不被破坏，从而维持生命体的生命过程和生物特征。
