无臭、无味、无毒、热易吸潮。溶于水形成胶体状溶液，对光、热稳定。不溶于乙醇、乙醚、氯仿等有机溶剂。 其水溶液具有良好的粘性、稳定性、保护胶体性和成膜性，不易腐败变霉，在大碱性和弱酸性 条件下稳定，在强酸条件下将产生沉淀。 水溶液在碱中较稳定，在酸中较差，生成不溶于水的游离酸，粘度降低，因此不适用于强酸性食品。水溶液在80℃以上长时间加热，则粘度降低。 本品与羧甲基纤维素（CMC）有相似的性能，具有增稠、悬浮、分散、乳化、粘结、保水、保护胶体等多种性能。
