- 外观性状：胆汁酸是胆汁中存在的一类胆烷酸的总称，为白色粉末，无臭，味苦，其碱金属盐均易溶于水和醇中。天然的胆汁酸通常以肽键与甘氨酸或牛磺酸结合并与钠、钾离子结合成胆汁酸盐存在于胆汁中。
- 正常人胆汁中的胆汁酸按结构可分为两大类：一类为游离型胆汁酸，包括胆酸(cholic acid)、脱氧胆酸(deoxycholic acid)、鹅脱氧胆酸(chenodeoxycholic acid)和少量的石胆酸(lithochalic acid)；另一类是上述游离胆汁酸与甘氨酸或牛磺酸结合的产物，称结合型胆汁酸。主要包括甘氨胆酸、甘氨鹅脱氧胆酸，牛磺胆酸及牛磺鹅脱氧胆酸等。一般结合型胆汁酸水溶性较游离型大，这种结合使胆汁酸盐更稳定，在酸或Ca2+存在时不易沉淀出来。胆汁酸按其在体内来源的不同可分为初级胆汁酸和次级胆汁酸。肝细胞内，以胆固醇为原料直接合成的胆汁酸称为初级胆汁酸，包括胆酸和鹅脱氧胆酸。胆酸和鹅脱氧胆酸都是含24个碳原子的胆烷酸衍生物。两者结构上的差别只是含羟基数不同，胆酸含有3个羟基 (3α、7α、12α)，而鹅脱氧胆酸含2个羟基(3α、7α)。初级胆汁酸在肠道中受细菌作用，进行7α脱羟作用生成的胆汁酸，称为次级胆汁酸(secondary bile acid)，包括去氧胆酸和石胆酸。胆汁酸的立体构型具有亲水和疏水两个侧面，因而使胆汁酸表现出很强的界面活性。它能降低脂、水两相之间的表面张力，促进脂类形成混合微团，这对脂类物质的消化吸收以及维持胆汁中胆固醇的溶解都起重要作用。
